Popovers are my favorite, especially when they actually come out so perfect like these today. Anyone that has made popovers know that they don't always come out to great. I always use our old friend Bob's recipe from a cook book he authored many years ago. I love using these popover pans, too. I've used my cast iron ones before but these definitely help get sky high popovers.
Here's the recipe as I make it:
1 cup flour
2 eggs
1 cup milk
pinch of salt
pinch of nutmeg
1 tbsp of melted butter
2 tbsp of butter to put into hot popover pan
I hand mix eggs, milk, salt and add melted butter. Then add sifted flour and mix quickly. It will be lumpy. Let it sit at room temp. for 1-3 hours depending on your schedule- I only had an hour today. Preheat to 350 degrees F. When oven is hot, add a little of the butter into each muffin cup and put into over for a few minutes till pan is hot and butter melted. Then add batter to each pan and bake 35-40 minutes. Remember to resist the temptation of peek at the popovers as they cook......and cross your fingers!
*** Remember: these babies are finicky. Most days I probably wouldn't have grabbed my camera, but today there was bragging rights!
Tree is down and ready for the New Year. Saturday I ventured back into investigating Etsy. I dabbled with it a few years ago when my book came out, but didn't give it much time or effort. I am always telling craftspeople to give it a try; I buy on it often and really like the community of sellers. I have always been pleased with my purchases. So I am wandering back and trying to figure it all out; it's not to hard, but there is always a little learning curve. If anyone has suggestions; I'd love to hear them.
